Nicolas Valanchon

 Nicolas discovered his passion for cooking at a very young age, spending time at his uncle and aunt's place, who were butchers, charcutiers, and caterers in the Somme region. 

Trained in the culinary schools of Paris and Amiens, he quickly turned to gastronomy and refined his craft in Michelin-starred establishments. For six years, from Le Touquet to Paris, and even in Sydney, he perfected the basics of this demanding profession. 

Upon returning to France, he trained as a caterer for over two years, with one personal project in mind: opening his own establishment. This dream became a reality at the end of 2010 with the opening of a restaurant in Paris, quickly praised by critics with two toques in the Gault & Millau guide. Two years later, he teamed up with two partners to launch a catering service just steps from the restaurant. The Parisian adventure ended in 2015, paving the way for new experiences. Nicolas then joined a research and development project in the agri-food sector before flying off to Southeast Asia for three years.
